Spicy Chicken Feet (Adidas) Adobo

This is the simplest Pinoy style Spicy Chicken Feet Adobo.  Chicken feet or what we commonly called "Adidas", when grilled, this is sold as street food in every part of the Philippines. Also, this can be seen in any Chinese Restaurants with dimsums.  I decided to cook this because it happened that my usual habit of Spicy Chicken Feet in RML Resto here in Kalibo, Aklan had run out of this.  So, instead I went to the market and just bought 1 kilo of Chicken Feet for 80 Pesos.  As usual, that's why i'm blogging this because it is one of my fave street food.  ;)

Ingredients:
**1 kilo chicken feet
*** Soy Sauce
*** Vinegar
4 cups of water (more water, more to soften the chicken feet)
10 Calamansi juice extract
2 tbsp. Hot Sauce
1 tbsp. Sugar or (accdg. to taste)
4 Bay Laurel Leaves
1 and 1/2 tbsp. Peppercorns (crushed)
2 tbsp. Cooking Oil
1 big Onion (minced)
1 big Garlic (minced)
5 red chili peppers (minced)

** Chicken feet are sold in the markets... Tell your "suki" to de-claw it.
How to prepare:  clean it well with rock salt and chop it half

*** I did not put measurements for the soy sauce and vinegar because every time I cook Adobo, I just pour those seasonings without measuring it.  Well, to give you some idea for this, just add 1/2 cup of soy sauce and  1/4 vinegar.  Just taste it once in awhile... If it lacks saltiness, add some soy sauce.

How to cook Spicy Chicken Feet?

1.  Prepare your "kawali" pan and heat it up into the flame.
2.  When heated, pour the cooking oil and wait until it boils.
3.  Sautee the garlic, onion and chili red peppers.
4.  Place the chicket feet, water, soy sauce and vinegar, bay leaves, peppercorns.  Close it and wait until it boils.
5.  When it boils, lessen the heat.  And, let it simmer...
6.  Pour the calamansi juice extract, hot sauce and sugar when the sauce quite thickens already.
7.  Let it simmer for more minutes... (Try to taste it and judge what's more lacking ;) )
8.  When the sauce is perfectly thick... you're DONE!
9.  Remove it from the pan and place it in a clean plate.
10.  Serve and Enjoy eating!

Sugarland - Stuck Like Glue (Video & Lyrics)

Upon hearing this song made my ears stucked with it like a glue... LOL.  Just love the song, the lyrics and its' genre.  I googled it and found its music video in youtube.  Wow! The video's awesome... Love it!  Really funny... I had fun watching it.  One of the best video for me.  I'm a big fan of them already... hehehe

Sugarland, an American country music duo, is composed of singer–songwriters Jennifer Nettles (lead vocals) and Kristian Bush (background vocals, lead vocals, mandolinacoustic guitar, and harmonica). Sugarland was founded in 2002 by Kristen Hall with Bush and ultimately became a trio after hiring Jennifer Nettles as lead singer.[1]

Signed to Mercury Nashville Records in 2004, Sugarland broke through that year with the release of their debut single "Baby Girl," the first single from their multi-platinum debut album Twice the Speed of Life. The trio became a duo in 2006, when they also released their second album, Enjoy the Ride. This album produced their first two #1 singles (in the U.S.), "Want To" and "Settlin'," and won the duo a Grammy for "Stay." In 2008 they released their third album, titled Love on the Inside. This album produced three more #1 singles with "All I Want to Do," "Already Gone"and "It Happens." Their fourth album,The Incredible Machine was released on October 19, 2010 in both a standard and deluxe edition.

Absolutely no one that knows me better

No one that can make me feel so good

How did we stay so long together?
Everybody, everybody said we never would
And just when I, I start to think they're right
That love has died

[Chorus]
There you go making my heart beat again,
Heart beat again
Heart beat again
There you go making me feel like a kid
Won't you do it and do it one time?
There you go pulling me right back in
Right back in
Right back in
And I know, I'm never letting this go

I'm stuck on you
Stuck like glue
You and me baby we're stuck like glue
Stuck like glue
You and me baby we're stuck like glue

Some days I don't feel like trying
Some days you know I wanna just give up
When it doesn't matter who's right, fight about it all night
Had enough
You give me that look
"I'm sorry baby let's make up"
You do that thing that makes me laugh
And just like that

[Chorus]

You almost stay out, too stuck together from the ATL
Feeling kinda sick?
Just a spoon full of sugar make it better real quick

I say
Whatcha gonna do with that?
Come on over here with that
Sugar sticky sweet stuff
Come on give me that stuff
Everybody wants some
Melodies that get stuck

Up in your head (X3)

Stuck like glue
You and me together, say, it's all I wanna do
I said

[Chorus]
There you go making my heart beat again,
Heart beat again
Heart beat again
There you go making me feel like a kid
Won't you do it and do it one time
There you go pulling me right back in
Right back in
Right back in
And I know, I'm never letting this go

There you go making my heart beat again
Heart beat again
Heart beat again
There you go making me feel like a kid
Won't you do it and do it one time
There you go pulling me right back in
Right back in
Right back in
And I know, I'm never letting this go
I'm stuck on you

Stuck like glue
You and me baby we're stuck like glue
Stuck like glue
You and me baby were stuck like glue
Stuck like glue
You and me baby we're stuck like glue

Chicken Adobo with Potatoes

I was scrolling my old files from my (back-up) hard disk when I saw this photos that were taken last July 27, 2008.  What were I thinking during that time?... hmmm...  Maybe, I was planning to document my everyday simple recipe which is the Chicken Adobo.  Living away from my parents is a way to learn how to survive myself in my everyday living.  No servants around... No one will wake you up... No one will scold you when you get home late... and etc...  That's living alone.  This photos were taken in our townhouse in Quezon City.  So, just ignore my electric stove and utensils here. hehehe...

This is the simplest way to do adobo.  All Filipinos love it.  We always patronage cooking our food in Adobo style.  Adobo means cooking it with soy sauce and vinegar or calamansi juice extract.  In this recipe, I just added sliced potatoes for a healthier version.  Here are the photos. ;)

Just add black pepper (crushed), bay laurel leaves, and/or sili labuyo for more intense hotness...
Also add an extract of calamansi juice (as many as you like)

Cheesy Buco Corn Salad

This is one of the dessert, I always make when there's an occassion at home.  But sometimes I could make this when I can get someone to climb our coconut tree in our backyard.  As for all the Filipinos out there, this dessert is very popular since there's a lot of coconut trees around our country and this dessert is always present during noche buena or the new year's eve.  So, I made this again just to satisfy my craving of this dessert and to share it here especially, new year's eve is fast approaching.

You'll need this ingredients:

4 shredded young coconut meat
           (scraped using a coconut scraper)
1 (232g) Kaong (white), drained
1 (232g) Nata de Coco (white), drained
1 small can condensed milk
1 (250ml) All-purpose Nestle Cream
1 can Cream Style Corn
1 (180g) Eden Cheese

Here's how to do it:

1.  Slice the cheese in a dice shape.  As what you can see at the bottom image.

2.  Pour the Nata de Coco and the Kaong in your salad mixer bowl.

3.  Then, pour the Cream Style Corn...

4.  Then the cheese...

5.  Mix with Condensed Milk and All-Purpose Cream...

6.  Mix it all well...

7.  Lastly, add the Buco (scraped young coconut meat) to the mixture.

8.  Mix... mix... mix... them all...

9.  Chill it overnight in your freezer or until it is cold enough to be served.  Enjoy eating! ;)
