This is the simplest Pinoy style Spicy Chicken Feet Adobo. Chicken feet or what we commonly called "Adidas", when grilled, this is sold as street food in every part of the Philippines. Also, this can be seen in any Chinese Restaurants with dimsums. I decided to cook this because it happened that my usual habit of Spicy Chicken Feet in RML Resto here in Kalibo, Aklan had run out of this. So, instead I went to the market and just bought 1 kilo of Chicken Feet for 80 Pesos. As usual, that's why i'm blogging this because it is one of my fave street food. ;)
Ingredients:
**1 kilo chicken feet
*** Soy Sauce
*** Vinegar
4 cups of water (more water, more to soften the chicken feet)
10 Calamansi juice extract
2 tbsp. Hot Sauce
1 tbsp. Sugar or (accdg. to taste)
4 Bay Laurel Leaves
1 and 1/2 tbsp. Peppercorns (crushed)
2 tbsp. Cooking Oil
1 big Onion (minced)
1 big Garlic (minced)
5 red chili peppers (minced)
** Chicken feet are sold in the markets... Tell your "suki" to de-claw it.
How to prepare: clean it well with rock salt and chop it half
*** I did not put measurements for the soy sauce and vinegar because every time I cook Adobo, I just pour those seasonings without measuring it. Well, to give you some idea for this, just add 1/2 cup of soy sauce and 1/4 vinegar. Just taste it once in awhile... If it lacks saltiness, add some soy sauce.
How to cook Spicy Chicken Feet?
1. Prepare your "kawali" pan and heat it up into the flame.
2. When heated, pour the cooking oil and wait until it boils.
3. Sautee the garlic, onion and chili red peppers.
4. Place the chicket feet, water, soy sauce and vinegar, bay leaves, peppercorns. Close it and wait until it boils.
5. When it boils, lessen the heat. And, let it simmer...
6. Pour the calamansi juice extract, hot sauce and sugar when the sauce quite thickens already.
7. Let it simmer for more minutes... (Try to taste it and judge what's more lacking ;) )
8. When the sauce is perfectly thick... you're DONE!
9. Remove it from the pan and place it in a clean plate.
10. Serve and Enjoy eating!
